These are known as “crown” scissors, because once upon a time long ago dentists would use these style scissors in the installation of crowns.
The final grinding steps and all the sharpening is done by expert hands in Solingen, Germany. The cutting edges are micro-serrated for pinpoint control; use a glass file afterwards for a final polish.
Nippes is a real old school outfit, and if you put a premium on stainless-or-nothing (as most Americans do) the last best Solingen house of scissors and friends, in this opinion. Some models of scissors, however, such as the stork scissors and these crown scissors, the Germans wholly reject to offer in stainless steel, I suppose due to the high demands of the part’s production and the superior ability to work carbon steel.
