Flagship version of the 15cm chef’s knife, using 1.4116 aissy chrome vanadium stainless steel tempered to minimum 55 Rockwell.
Used to slice, cut, carve all refined meals inspired by French and international cook (meat, fish, raw vegetables, desserts).
Exquisite blue stamina wood and white micarta handle using three rivets. The overall exterior dimensions of the handle are ~16mm wide, ~22.5mm tall at the rear, and ~108mm from the rear to the vertical stabilizer. This is a robust knife at at weight of ~120g, which means the handle itself essentially adds ~40g of weight versus the nearly-equivalent base model of this same 15cm Thiers chef’s knife (which only changes the steel formulation, and the materials of the handle).
