While we also have their more modest standard-issue line, and have been able to sell a few to seemingly-very-happy customers judging by their comments, over in the need-has-nothing-to-do-with-it category we have here Sabatier/Thiers-Issard’s flagship elite model tomato knife, with micro serration and a simply gorgeous handle constructed of a combination of blue stamina wood outer and white micarta inner layer.
When I went to the Thiers Issard factory to make a video for razors, I wanted to be sure to gather a set of knives for the home which would, should we ever be lucky enough to be back in our home again, have an elegance on the kitchen island or wherever they hang out. My chosen handle theme was these blue stamina and white micarta things.
Their ‘base’ model knives have the same great balance and feel as these fancier ones, while the fancy ones add really pretty handles made without plastic, sometimes more rivets in the handle, and the superior Cr-Mo alloy of steel.
This knife has a 13cm cutting edge length, and is composed of 4116 stainless steel. 55 Rockwell minimum. Weight is approximately seventy-two grams.
